KenjiHara, Ph.D. Holder,, honoraryprofessor of the Department of Aquatic Product Science of Nagasaki Universityand professor of the Graduate School of Health Science, Kyushu NutritionWelfare University, has been engaging in researches onmarine biochemistry, food science, aquatic product science and other fields fornearly 50 years. He is mainly devoted to studying the molecular mechanism ofmuscle proteolysis by endogenous proteases in fish muscle, especiallycathepsin, serine protease, etc. He has published more than 100 papers on Food Chemistry, Plos One and many other journals.


AsamiFujita (former name: Asami Yoshida), Ph.D.holder and associate professor of the Graduate School of Aquatic Product andEnvironment of Nagasaki University, is mainly engaged in researches on marinebiochemistry, proteomics, aquatic product science and other fields. Currently,he is focusing on the molecular biology of marine organism-derived functionalproteins, including structure, physiological mechanism, etc. He has publishedmore than 20 papers on Food Chemistry,Plos One and many other journals.
