电子鼻电子舌电子眼在食品饮料行业的新应用
介绍诸如电子鼻及电子舌的传感器阵列系统,其已在世界领先的食品,香味,饮料公司的分析实验室占有一席之地,并在环境领域作为一种检测voc、气味的快速、简单、实时的分析方法得以应用。
过去十年中,传感器阵列系统应用已由产品开发及受训感官转入产品的质量保证及控制,香气、风味、口感等方面的质量和强度控制吸引了越来越多食品和饮料公司的注意力。这些系统简化了气相色谱对感官进化的依赖同时增强了在口感和气味评估方面的安全性。
主讲人侧重于仪器的工作原理,并重点讲解电子眼。电子眼最新型的在产品开发和产品控制方面的应用开基于高灵敏度的CCD摄像头技术及复杂的数据运算。多元统计分析的介绍:约束和非约束算法原理,气、液数据的应用,拟合仪器测值与感官评测的策略。

Jean-Christophe MIFSUD(米傅肃)
AlphaMOS公司首席执行官,AlphaMOS公司为世界电子感官系统的领导者,总部位于法国图卢兹。公司成立于1992年,致力于开发与人类感官相关尤其是嗅觉及味觉方面的仪器,于1998年在巴黎证券交易所上市。米傅肃先生曾就职于Rhone-Poulenc inc 和CIBA-GEILY 公司。他在图卢兹大学获得化学工程学位,并于ESSEC商学院获得MBA学位,在普林斯顿大学获得神经化学博士学位,拥有多项专利技术。

INTRODUCTION :
- Sensors arrays systems such as Electronic noses and Electronic tongues have generated a great level of interest in the analytical laboratories of the world’s leading food, flavors, and beverages companies, as well as in the environment as a fast, simple, and reliable method of aroma/VOC analysis that could provide results correlated with sensory analysis.
- Over the past 10 years, the sensors arrays system have demonstrated their ability to transfer expert knowledge from product development group and trained sensory panels into a production environment for quality assurance and control. Flavors, Aroma and Taste qualities and intensities control attracts an increasing level of attention from food and beverages companies.
- Those systems reduce needs for sensory evaluation or GC and provide added safety when performing taste or olfaction assessment.
The Talker will present
- the working principle of the instruments ( E nose , E Eye and E tongue), and will focus on the Electronic Eye
- The newest developments in the fields ofelectronic Eye based on high sensitivity CCD camera and sophisticated data processing both for product development and product Q/C.
- Introduction to multivariate analysis: principle of non-supervised and supervised algorithms, application to gas and liquid sensor data set , strategy to correlate the instrumental measurement with various sensory test (A/non A test, sensory descriptor intensity, consumer test).

Dr Jean-Christophe MIFSUD
Dr Jean-Christophe MIFSUD, is President and Chief Executive Officer of ALPHA M.O.S,
a worldwide leading company in Smart Sensing Systems, and headquartered in
Toulouse, France. He founded this company in 1992, for which the mission is to develop
instrument correlated with the human senses, particularly those of smell and the taste.
Dr. MIFSUD has floated ALPHA M.O.S on Paris Stock exchange in 1998. Before funding
Alpha-MOS, he acquired professional experiences within M & A Department of Rhone-
Poulenc Inc. USA, and as Marketing Manager for CIBA-GEIGY in Switzerland.
He first earns a Chemical Engineering degree from Toulouse University, then holds a
MBA from the ESSEC business school in Paris and a PhD in Neurochemistry at Princeton
University, New Jersey, USA. He also holds several patents in various fields.
